It's a snowy day out there! A good day to stay inside where it is warm and do some cooking. This is a great recipe for granola. It was intended for babies over age 1 (due to the honey) but Eric and I love it, too.
Baby Soft Granola
3 c. raw oatmeal
1 c. wheat germ
1/2 c. flaked coconut
1/3 c. dry milk, nonfat
1 T. white sugar
1/4 c. canola oil
1/3 c. honey
1 tsp. almond extract
1/3 c. golden raisins (or any dried fruit; Sun-Maid makes dried fruit bits mix which includes raisins, dried apricots, dried cherries, etc. that I can't wait to try in it)
Mix all dry ingredients. Mix oil, honey, and extract in saute pan and warm on the stove until it reaches a good pouring consistency. Pour liquid over dry ingredients and stir until well covered. Spread thinly on a greased cookie sheet and bake at 225 degrees for 1 hour. Stir every 15 min. When cool, add raisins. Store in airtight container. Eat like cereal with milk poured on top.
